Today I found out I need new boots. Why? Because it was raining cats and dogs.

When did I discover this you ask?

When I was hauling thousands of pounds of groceries up several flights of stairs to my apartment. And a baby. And my dog was running away. And I was getting really mad because I had actually done my hair for once. And washed my car.

I apologize, Santa Rosa. I’m obviously the reason it’s raining today.

BUT… I have to admit. I actually adore rainy days because I get to stay in and cuddle my baby and eat delicious things like this chili.

I’ve got two words for you. One pot. Did you just get really excited? Because you should have. You only dirty one pot while making this chili, so you spend less time cleaning up after yourself and more time cuddling.

Doc’s Chili (Serves 6)

1 lb. ground turkey
1 large onion, chopped
2-3 cloves garlic, minced or chopped
1 quart diced tomatoes
4 c. chicken broth
1 can black beans, drained and rinsed
1 can pinto beans, drained and rinsed
1 can olives, chopped
1 T. cumin
Salt and pepper to taste 

Brown turkey with onion and garlic.  Add other ingredients and bring to a boil.

This chili is SO good, SO filling, SO easy and SO healthy. It’s pretty much perfect.

Serves 4-6. Calories per serving: 300

  1. Sounds yummy! I’ve been wanting to find a chili recipe without beef, although, I’ll probably leave the olives out. None of my family are olive eaters. Any idea on Nutritional Values or serving sizes for this? Would love to put this in my healthy meal prep rotation! Thanks for the recipe!

      Hi Niki, I have added the nutritional facts. Thanks for the feedback! There are 300 Calories in a serving and it serves 4-6!
