These fajitas are so simple, so healthy and so good. You won’t even believe that you are eating something that is so healthy for you. You can pair these fajitas with any type of meat, I recommend chicken or shrimp to keep it lean and low calorie. BUT… to be honest, these fajitas don’t even need meat, so for all my vegetarian peeps out there, I got ya covered.

2 green peppers, thinly sliced
1 red pepper, thinly sliced
1 onion, thinly sliced
1 c. fresh mushrooms, sliced
2 c. diced, cooked meat
1 – .7 oz. package dry Italian salad dressing mix


In a large frying pan or wok, sauté peppers and onion in a small amount of olive oil until tender.  Add mushrooms and meat.  Cook on low heat until heated through.  Add dry Italian dressing packet and stir to coat.

Serve with whole wheat tortillas and your favorite fajita toppings!

I love a chopped tomato on mine and a sprinkling of low fat cheddar cheese.

My absolute favorite part about these fajitas is that the longer they sit, the tastier they get.

So make sure to make the whole batch even if there are just a few of you, because, believe it or not, they’re even better as leftovers the next day.
