Who doesn’t love a good chicken salad sandwich for lunch? With all that fatty mayonnaise though, it’s hard to justify having it very often, right?
Well, friends… think again!
This recipe utilizes the creaminess of plain non-fat greek yogurt to offer that fresh flavor we’ve all come to love and expect from chicken salad.
Without sacrificing any flavor, we pack in the protein, healthy probiotics and tons of vitamins and minerals.
In fact, just a cup of plain, non-fat greek yogurt contains 23 grams of protein. That is almost half of your daily protein requirement! This is helpful when you are looking to build healthy muscle, but it also aids in weight loss because it helps you feel fuller for a longer period of time.
Greek yogurt also supplies you with calcium, potassium, vitamin D, vitamin A, vitamin B12, riboflavin, phosphorus and niacin. We all know how important calcium is in our daily diets for bone health, but calcium alone isn’t going to do you much good.
Fun fact: your body doesn’t absorb calcium without the help of vitamin D. Whaaaat? Yeah. Seriously. So instead of running out to the pool to sun bathe while sipping on a tall glass of milk just make this! Eating this chicken salad sounds exactly 100 times more awesome than drinking milk while sunbathing.
Healthy Chicken Salad
Ingredients:2 cups shredded rotisserie chicken ½ cup greek yogurt 3 tablespoons lowfat mayonnaise 2 stalks celery, chopped ½ cup grapes, halved ¼ cup sliced almonds salt and pepper to taste
Add all of your ingredients to a bowl and mix together.
You can always throw your chicken salad onto some healthy whole wheat bread, but I personally love to throw it on top of a fresh avocado.
Confession time. I am not a huge fan of greek yogurt. I know! I know! I just told you all of this super awesome stuff about it though! I promise I am sincerely trying to learn how to like it, but in the meantime I have learned how to mask the flavor really well. In this chicken salad, you seriously cannot tell that greek yogurt has been used. If you serve this to your friends and family, nobody will ever know that you just served them a plateful of healthy awesomeness.
